Hard-anodization is an electro-chemical process used to make aluminum harder and stronger. (Hard-Anodized aluminum is 30% harder and more durable than stainless steel.) During the hard-anodization process, a chemical reaction (called oxidation) on the surface of the aluminum combines with oxygen to become aluminum oxide.  Hard-anodization is a controlled, accelerated oxidation. These pots and pans are known commonly as nonstick cookware.

The most durable pans you can buy are hard-anodized and the surface of this type of cookware resists abrasion and corrosion. They don't peel or chip and have a very long life-span. Their non-porous qualities won't allow food to stick.
