Q: What do you cook in a double boiler?
A: The term double boiler comes from the French term: bain marie (pronounced bane mah-REE) which translates as Mary’s bath. This method of cooking is used for dishes that require a gentle cooking method such as custards and white sauces or for melting chocolate. Specifically, to use this method a larger pan containing water (just to simmering) is placed on the burner, while a smaller pan is placed in it with your ingredients that require delicate cooking. Cooking this way allows the food you are cooking to be surrounded with very gentle heat so that the cooking is slow and even.
Q: What is pressure cooking and why do pressure cookers cook so well?
A: To pressure cook food, , an airtight metal pot that holds steam in it while under pressure at a high temperature above the boiling point.
These cookers are very effective because food cooked under pressure can be cooked at higher temperatures without burning (because there is less evaporation. Pressure cookers take advantage of the fact that water boils at a higher temperature when pressure is increased.
Q: What is induction cooking?
A: Induction cooking uses electromagnetic energy to heat cookware made of steel, iron, nickel or other alloys that are manufactured from magnetic materials. When the induction unit is turned on, the coils produce a high frequency alternating magnetic field, which flows through the cookware. Molecules in the cookware move back and forth rapidly, causing the cookware to become hot and cook the food.
